I survived the 3-Day Egg Fast!

As a Keto Coach I’ll never ask someone to do something I’ve never done myself so when it came time to implement the Egg Fast strategy with my current Keto 102 group I braced myself! See I like eggs… but I don’t LOVE eggs… so the thought of eating them, and only them, for 3 days did not excite me!

Let me give a spoiler alert though so you’ll want to keep reading… IT WORKED… and I survived lol:)

What the heck is an Egg Fast and is it healthy? Well let me start with yes its perfectly safe and healthy but as usual if you have special health circumstances follow your doctors orders 😊 The Egg Fast is one of the 7 Fat Burning Strategies that I teach in my Keto 102 program. I recommend getting yourself into nutritional ketosis first and fat adapted before you try any of these, including the Egg Fast. This is a great strategy to use when your keto loving body needs something extra to get past a plateau.

So what did I eat?

Day 1 I was boring and stuck to scrambled eggs with cheese (cooked in 1 TBSP of kerrygold butter) and a cheese omelet.

Days 2 & 3 though got better as I discovered Egg Salad and Snickerdoodle Crepes! Yum!! See below for recipes!

Snickerdoodle Crepes

Ingredients

For the crepes:

·         6 eggs

·         5 oz cream cheese, softened

·         1 tsp cinnamon

·         1 Tbsp granulated sugar substitute (I used Lakanto monkfruit)

·         butter for frying

For the filling:

·         8 Tbsp butter, softened

·         1/3 cup granulated sugar substitute

·         1 Tbsp (or more) cinnamon

Instructions

1.      Blend all of the crepe ingredients (except the butter) together in a blender or magic bullet until smooth. Let the batter rest for 5 minutes.

2.      Heat butter in a nonstick pan on medium heat until sizzling.

3.      Pour enough batter into the pan to form a 6 inch crepe. Cook for about 2 minutes, then flip and cook for an additional minute.

4.      Remove and stack on a warm plate. You should end up with about 8 crepes.

5.      Meanwhile, mix your sweetener and cinnamon in a small bowl or baggie until combined.

6.      Stir half of the mixture into your softened butter until smooth.

7.      To serve, spread 1 Tbsp of the butter mixture onto the center of your crepe.

8.      Roll up and sprinkle with about 1 tsp of additional sweetener/cinnamon mixture.

Approx nutrition info per serving: 434 calories, 42g fat, 2g net carbs, 12g protein

So how did it go? Well you can see from my post I lost 3.5 pounds which made me happy! In addition though, I had great energy and didn’t feel too hungry. I did have a couple of string cheese snacks which helped! Will I do the Egg Fast again? Yes, if I hit another plateau (or rather when I hit another plateau) I will definitely do this again to boost my ketosis and fat burning!

I have found my new obsession. Actually no- I created my new obsession!! These keto chocolate bites are sooooo good. It will be hard to eat just one but the good thing is they are only 1 net carb so if you DO grab a second its ok!!

What you'll need:

  • 2 TBSP Kerry gold butter (softened- I will nuke it for 10 seconds)
  • 1 ounce Cream cheese
  • 2 TSP Heavy Cream
  • 1/2 TBSP Cocoa Powder
  • 1/2 TBSP Monkfruit Sweetener (I use Lakanto)
  • 2 TSP Lakanto Suntella (OMG I could eat this stuff from the jar!!)
  • 1/4 cup Lily's chocolate chips melted

First mix the butter and sweetener until blended, then add in the cream cheese and blend until smooth. Add in the cocoa powder and Suntella and blend then add in the creamer.

The mixture will be kind of sticky but if you wet your fingers the next part is easier. Separate the mixture into 5 even blobs (for lack of a better word!) and then form into ball.

Melt your lily's chocolate and spoon over each blob! (I don't bother with the bottom)

Stick in fridge for an hour and BOOM! Deliciousness will be ready!!

The BEST Keto Pecan Pie!!

This is late in coming out to you BUT Pecan Pie should be enjoyed all year long, not just over the holidays!! I am so excited to share this incredible recipe I made recently and that my entire family, keto and non-keto, thoroughly enjoyed!! Mind you I had NEVER attempted a pecan pie in the past so I was nervous but I LOVE pecans and I love pie so I figured this would be a good bet....and it was!

I like to gather all of my ingredients so I'm organized and I don't forget something!

For the Crust you will need:

  • 3/4 cup Coconut Flour
  • 1.5 eggs (yes that is weird- 1 isn't enough, 2 is too much. Do your best and eyeball half an egg!)
  • 3 tsp erythritol (I use Lakanto)
  • 6 TBSP grass fed butter
  • 3/4 TBSP coconut oil
  • 3/4 Tsp Vanilla extract
  • 1/2 Tsp salt

Preheat over to 350

Combine dry ingredients in bowl and set aside and the wet ingredients in another bowl- combine well and gradually add the wet ingredients until fully combined until it forms a soft dough. 

Grease your pie pan and press the dough into the pan covering the bottom and sides. Then bake for 11-12 minutes. Make sure edges don't burn.

Remove and let it cool completely before adding filling!

Filling:

  • 3/4 cup Sugar free maple syrup substitute (I use Lakanto Maple Flavored Syrup)
  • 1 cup of Pecans chopped
  • 2 eggs
  • 1/4 Cup monkfruit sweetener (I use Lakanto)
  • 2 TBSP grass fed butter
  • 1 TBSP Vanilla extract

Preheat oven to 350 and melt butter in microwave (or stovetop)

Place all ingredients (except for pecans) into a bowl and mix

Fill the cooled crust with the chopped pecans

Pour the wet mixture over the pecans and then bake for 50 minutes! Once you remove the pie from the oven let it set for several hours or overnight in fridge!

I love how in my keto club we are sharing recipes and ideas and simply encouraging one another in this journey! It makes me so happy because that was exactly my goal for this group! So in the spirit of sharing I decided to make this week's blog about 4 of my favorite recipes I made this past week!

Let's start with breakfast! So... I discovered a new site with great breakfast recipes that I will be trying out this week!! I am all about SIMPLE recipes and these are all under 5 ingredients! The biggest question I get is what can I eat for breakfast? So I'm always hunting for recommendations to offer. I am not a huge breakfast eater... often I get by with simply drinking my keto coffee and maybe a slice of bacon.

Breakfast in Five

For now let me tell you about my amazing Chocolate Keto Pancakes! These were so good even my non-keto teenager liked them! Super simple and quick to make AND filling!

Yield: 8-10

  • 4 ounces Cream Cheese
  • 4 Eggs
  • 2 TBSP unsalted grass-fed butter
  • 1 Scoop Chocolate Shake
  • 1/2 TSP vanilla extract
  • Coconut cooking spray

Allow the cream cheese and butter to soften a bit before mixing. I put all my ingredients in my mini blender and mix until well blended. Then spray a skillet with Coconut cooking spray. Cook each side about 2 minutes or until the mix starts bubbling. 

Top with sugar free syrup and butter!

Let's move on to lunch!! I made my very first Fat Head Pizza this weekend and this is definitely going in my rotation. The dough is easy to make and so much better than I expected. I've made cauliflower crust but find it to be too rich for me. This was perfect! I can't take the credit for this dough-- I followed the exact recipe from Ditch the Carbs-- and highly recommend it!!

As you can see it was 3 simple steps! Mix the dough, bake in the oven then add your toppings! There are so many variations you can do with this pizza! I'm thinking next week I might try and make a calzone with the dough!

 

Time for some SWEET TALK! It is no secret I have a major sweet tooth. Fat Bombs have become my BFF of keto. This week I wanted to try something new though. Someone in my keto club posted this bark recipe and so I decided to try it out. It did not disappoint!!

Lastly... dinner!! I have made these meatballs in the oven in the past but decided to try out the recipe for the Instant Pot as I'm obsessed with this contraption! If you don't have one yet you NEED this. You get the juicy, tender quality of slow cooked meals but in a fraction of the time. I got my Instant Pot this summer and I love it!! Still trying to adapt recipes to high pressure cooking and hope to share some more soon!!

I love the meatball recipe from the site I breathe I'm hungry-- it is a fitting title and she has some great recipes I've been using for years!! For the meatballs I find that not browning them first they cook well and stay intact in the Instant Pot. Once they are done cooking I add a small slice of fresh mozzarella to each meatball. So good!!

This upcoming week I will be on the hunt for travel friendly keto snacks to prepare for my trip to Houston! My 17 year old daughter will be competing in Houston in a national scholarship pageant-- so I am determined to find some simple snacks to pack that will keep me on track! Will share next week what I come up with!
